BJORN SHEN

    BJORN SHEN is chef and owner of Middle Eastern restaurant Artichoke in Singapore.
    Starting out as a dishwasher/kitchen hand back in 2003, Bjorn’s 14 year long culinary career has taken him through professional kitchens in Singapore, Brisbane, Copenhagen, Mumbai and Dubai.
    Brandishing an attitude seldom seen in Singapore’s restaurant scene, Bjorn is quick to profess his obsession with junk food, and takes pride in championing ideas seen by other chefs as low-brow. Coining his style of cuisine ‘dudestronomy’, Bjorn elevates what are otherwise guilty comfort foods, and has a penchant for spoofing iconic dishes from fast food brands to create premium, restaurant-worthy versions.
    He was an Adjunct Lecturer at the Culinary Institute of America in Singapore. In 2016, Bjorn was the first Singapore chef to be featured by Vice Media, and in 2018, Bjorn was a finalist for Chef of the Year at World Gourmet Summit
